Hello everyone,

Whether it’s for your weekday breakfast or a weekend family breakfast, this sauteed mushrooms with garlic and asparagus side dish is sure to please. It’s easy to make, healthy, and full of flavor! It doesn’t take more than 12 minutes to cook and does not require any special skills-perfect for any day.

We are using button mushrooms here, but it goes well with shitake mushrooms as well. Just remember that different types of mushrooms have different flavors, so it’s important to choose the right one for the dish you are preparing.

The key thing about this recipe is not to overcook the asparagus. You want it to be crisp while still having a slight crunch. And, of course, the garlic gives it a delicious aroma and flavor.

It can be served with any kind of bread and a side dish of your choice. You can sauté some yellow onions or shallots with the garlic if you like to add a depth of flavor to the dish. Feel free to use green onions if you like. You will definitely be impressed by how simple it is to make.

Ingredients
  

  • 2 tbsp. Olive Oil
  • 4 Cups White Mushrooms sliced
  • 4 Cloves Garlic diced
  • 2 Cups Cherry Tomatoes halved
  • 2 Cups Asparagus chopped
  • 1/2 tsp Italian Seasoning dried
  • 1/4 tsp Ground Black Pepper
  • 1 tsp Salt per taste
  • 1/4 Cup Cheddar Cheese shredded
  • 1 tbsp. Fresh Flat Leaf Parsley diced

Instructions
 

  • Let's prepare the ingredients: olive oil, sliced white mushrooms, diced garlic, half cherry tomatoes, chopped asparagus, dried Italian seasoning, ground black pepper, salt, shredded cheddar cheese, diced parsley
  • In a pan add olive oil, sliced white mushrooms, diced garlic sauté for 10 minutes on medium heat until the mushrooms are soft.
  • In the same pan, add the following ingredients: cherry tomatoes cut in half, chopped asparagus, dried Italian seasoning, freshly ground black pepper, and salt. Cook for 3 minutes on medium heat, stir to combine.
  • Finally, Add shredded cheddar cheese and the diced parsley until well combined. Serve immediately with toasted sourdough bread and a fried egg on top of the dish.
